CARIBBEAN CORN SAUTE

Serves: 6

Ingredients

1/2 Zucchini
4 cups sweet corn
½ green bell pepper, diced
½ red bell pepper, diced
1 tsp. Urban Flavorz Thyme
3 Tbsp. butter
½ cup half & half
½ tsp. salt
black pepper to taste

 

Preperation

Melt butter in a large pan. Add corn, bell peppers and thyme. Cover and cook over medium heat for 2 minutes. Reduce heat. Add half & half and season with salt and pepper. Cook uncovered, for 5-7 minutes over low heat, until liquid is absorbed. Stir often during cooking.
