Penne Pasta Bake

Serves: 4


1 Tbsp. olive oil
1 cup minced carrots
1 cup diced yellow onions
3 minced garlic cloves
½ cup diced green bell pepper
1 lb. ground chicken
½ cup dry red wine
2 (28 oz.) cans diced tomatoes in juice
¼ tsp. Urban Flavorz Salt & Pepper Blend
2 Tbsp. Urban Flavorz Italian Seasoning
1 cup shredded Mozzarella cheese
5 cups cooked penne pasta



Preheat oven to 350°F. Sauté onion in oil in a large skillet. Stir in garlic, carrots, and bell pepper. Add chicken and cook unil browned. Stir in wine, simmer a few minutes, then add tomatoes, Italian seasoning, and pepper blend. Simmer 5-6 minutes. Spread pasta over bottom of 9x13-inch baking dish. Pour sauce evenly over pasta, making sure pasta is covered. Sprinkle cheese over top. Cover with foil and bake 30 minutes.
