Thai Tom Kha Ghai

Serves: 4


400 ml coconut milk
8 kaffir lime leaves
2 Tbsp shredded ginger
2 Tbsp fish sauce
1/2 cup frozen peas, defrosted
½ to 1 cup snap peas
Handful of cherry tomatoes
1 cup peeled and deveined shrimp
1 tsp Urban Flavorz red chili flakes
2 Sticks Urban Flavorz lemongrass



Combine 2 cups water with coconut milk in a med saucepan and bring to a boil. Add the remaining ingredients, reduce heat and simmer for 20 min.
